I’m trying something different today. I’m taking my favorite gluten-free chocolate chip cookie recipe (get the cookbook) and trying to make it into bar cookies. I made the dough without the chocolate chips, spread it out in one layer on the bottom of my jelly roll pan, and baked it like an extra 5 minutes so it’s good and crispy. I’m going to top it with some chocolate ganache I made using 60% chocolate chips and coconut milk, and maybe something else. I’ll let you know how it goes.
